This washed coffee comes from the Ngelle Gorbitu cooperative in the Yirgacheffe region of Ethiopia. The cooperative is made up of 858 smallholders with a central washing station for processing. They use raised beds to dry the coffee, with a focus on regular turning to avoid developing fermented flavours.
The result is a beautifully clean and complex coffee. There is a pomegranate acidity that gives way to fresh raspberry and sherbet sweetness and a soft apricot and peach body. The finish is of smooth creamy caramel.
